Method
- Wash and clean your fish or seafood, and pat dry.
- Season with salt while on the chopping board and leave to marinate.
- Separately chop up a large onion, and a 1/2 a tomato if available, along with 2 – 3 pods of garlic, and add to a deep pan to saute in a tablespoon or 2 of coconut oil. Add a few curry leaves also enhance the sauted onion mix.
- When fragrant add 2 tablespoons of the curry powder mix and let it also saute till the oil separates (add more oil if required).
- Once fragrant add sufficient water and bring to a boil. Add 2 pieces of Goraka ( Gracinia) which helps to keep the fish together as it otherwise may flake if over handled. Once gravy is boiling add the fish/seafood and cook through (doesn’t take much time).
- Serve with hot rice.
