Brown Fish/Seafood Curry

Method

  1. Wash and clean your fish or seafood, and pat dry.
  2. Season with salt while on the chopping board and leave to marinate.
  3. Separately chop up a large onion, and a 1/2 a tomato if available, along with 2 – 3 pods of garlic, and add to a deep pan to saute in a tablespoon or 2 of coconut oil.  Add a few curry leaves also enhance the sauted onion mix.
  4. When fragrant add 2 tablespoons of the curry powder mix and let it also saute till the oil separates (add more oil if required).
  5. Once fragrant add sufficient water and bring to a boil. Add 2 pieces of Goraka ( Gracinia) which helps to keep the fish together as it otherwise may flake if over handled. Once gravy is boiling add the fish/seafood and cook through (doesn’t take much time).
  6. Serve with hot rice.
