Method
- Pat dry your favourite joint of meat (Sri Lankan beef is tougher in nature and will require tenderising and goes well with beef chops).
- Rub down the meat with table salt.
- In a separate bowl, mix a tablespoon of the rub and the juice of one lemon or lime with a tablespoon of oil (coconut oil preferred)
- Massage the rub into the meat. If you run out of rub you can remix to the same previous ratio with coconut oil and reapply generously.
- Bake in oven (or grill) at 170c for the required time depending on the joint of meat.
- Serve with whole roasted potatoes/Vegetables and/or yellow rice.
VARIATION – You may add 2 tablespoons of curd or Yoghurt to mix and marinate as well – this gives a buttery taste to the product.
